Thirsty Third Thursday: Peppermint Schnapps Mocha

Peppermint Schnapps Mocha
I don't know about you, but I love Starbucks Peppermint Mocha.  Do you know what would make it even more delicious?  Trade that peppermint syrup for some peppermint schnapps.  Probably not to start the day, but definitely a good way to end one!  You can use coffee instead of the hot chocolate listed below...and if you want nonalcoholic: use 1/2-1 tablespoon peppermint extract + another 1/2 cup milk instead of peppermint schnapps...or use the syrup from Starbucks: Peppermint Syrup

Peppermint Schnapps Mocha (Four-1 cup servings)
1/3 cup sugar
1/3 cup baking cocoa, plus more to sprinkle
3 1/2 cups milk
1 shot peppermint schnapps (Note that peppermint schnapps is a higher proof than most liquors - drink responsibly)
Whipped Cream

Directions:
  1. In a large sauce pan mix sugar and baking cocoa.
  2. Gradually add milk (1/2 cup at a time) and continually stir until smooth.
  3. Cook over medium heat, continuing to stir to keep smooth.  Cook until hot, but do not allow to boil.
  4. Reduce to low heat and add schnapps (or extract), briefly stir.
  5. Pour into individual mugs, top with whipped cream, a sprinkle of cocoa (or sprinkles)
For individual servings in the microwave: combine 1 large teaspoon baking cocoa, 1 large teaspoon sugar, tiny dash of salt, and 2 teaspoons cold milk.  Stir until smooth.  Add 1 tablespoon schnapps (or 1/4 teaspoon extract) and then add milk until mug is nearly full.  Microwave on high 45 seconds, stir, microwave for another 30 seconds or until hot.
